I fried the goat cheese instead of crumbling it. It was crunchy on the outside and warm and velvety on the inside. I also used half the salad dressing. It was a big hit with my family.

A beautiful salad and delicious. I followed the recipe exactly with one exception: I cut down the olive oil to 3 TB as I like a more vinegary dressing. I ended up not using all the dressing. For those of you on Weight Watchers, this is 3-4 points, depending on how much olive oil you end up consuming. Here's a tip for peeling peaches and not wasting any of the precious fruit: immerse peaches in boiling water for 30 seconds. The peel comes right off.

A divine summer salad. I used white balsamic vinegar which complemented the sweetness of the peach beautifully. Didn't need any extra goat cheese.

Made this for dinner 2 nights ago, subbing fresh cherries for the peaches. Waaaaay too much basil. I love basil, but it overpowered all the other ingredients. Next time, I might use a tablespoon per salad.

I made this with nectarines since my daughter doesn’t like peach fuzz. It was delicious. For me fruit, cheese and nuts always make for a great salad. Served with scallops as suggested. Lovely, elegant dinner that took just minutes to prepare.

Love this salad - made it multiple times this summer. Usually used mixed greens or spinach with arugula rather than just arugula. Especially wonderful with great South Carolina peaches.

Honestly, even though my peaches were super ripe, they didn't add enough sweetness unless each and every bite had a piece of peach in it. Dressing needs a sweetener added - sugar, honey, something.

My wife’s favorite salad, and I make many! I use Citrus Champagne Vinaigrette and add grilled chicken. And the fresh basil is KEY! My “go to” when I want to score husband points. :)

I made this with pomegranates and feta cheese, as I didn't have peaches or goat cheese. I didn't change anything else and it was fabulous.

This was delicious! I’ve made this a few times. One time, I didn’t have any goat cheese, so I subbed in sheep feta, which was also terrific. Pinenuts can be iffy because they can be bitter, so I have used pecans or walnuts when I’ve made this. also always throw blueberries into the salad. It takes very little time to put together. I agree that the dressing could use a little bit of honey, or perhaps agave to sweeten it.

Lovely perfect summer salad. I grilled chicken drumsticks with it, and since I was already grilling I grilled peach halves as well. It added just that little bit of extra. I added just a bit of honey and minced garlic to the dressing.

Worth a try! It was good, not great. Felt like the dressing needed something else- perhaps honey or sugar. Was overdressed with 5oz of the arugula. All items felt soft- peaches, pine nuts, goat cheese. Would have liked some crunch to diversify texture.

Made with Palisade peaches in August (when you know, you know). So good, so well balanced, so simple and yummy. The taste of late summer in Colorado.

Used lemon juice instead of vinegar in the dressing (partner despises the taste of vinegar) and found it a perfect adjustment. Truly lovely salad.

I've done a salad like this with Reyes blue cheese and pecans- the blue cheese crumbles hold their integrity more than a goat cheese would but I love goat cheese and always have on hand and going to try this!!

Added a teaspoon of sugar to the dressing to enhance the sweetness of the fruit. Unfortunately my nectarines were a bit TOO ripe and a bit mushy. Wish I had made this a day earlier. Live and learn. Don't need all the dressing.

Used apricots instead of peaches and added a dap of Dijon and honey to the vinaigrette. Delicious!
